Michael's spicy lamb cutlets

Grill up tasty cutlets to wow your guests.
Ingredients:
  • 60ml (1/4 cup) honey
  • 60ml (1/4 cup) soy sauce
  • 60ml (1/4 cup) Worcestershire sauce
  • 70g (1/4 cup) wholegrain mustard
  • 20.00 ml dried mixed Italian herbs
  • 1 small fresh red chilli, finely chopped
  • 12 (about 500g) lamb cutlets, excess fat trimmed
  • Lemon wedges, to serve
Instructions:
  • In a large bowl, mix the honey, soy sauce, Worcestershire sauce, mustard, Italian herbs, and chili. Add the lamb cutlets and coat them with the mixture. Cover and refrigerate for 4-6 hours to marinate.
  • Heat up a barbecue flat plate or chargrill over medium-high heat. Remove the cutlets from the marinade and grill the lamb for 2-3 minutes on each side for medium doneness or to your preference. Place the cooked lamb on a plate, cover with foil, and let it rest for 2 minutes. Serve with lemon wedges.
