Creamy coconut curry chicken with cauliflower.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 white onion, chopped
  • 2 cloves garlic, crushed
  • 1 pound skinless, boneless chicken breast halves - chopped
  • 1 small head cauliflower, chopped
  • 2.5 tablespoons yellow curry powder
  • 1 teaspoon garlic salt
  • 1 (14 ounce) can unsweetened coconut milk
  • 0.33333334326744 cup chicken stock
Instructions:
  • In a skillet over medium heat, warm the oil. Add the onion and garlic, sauté until tender. Add the chicken, cook until juices run clear, about 10 minutes.
  • Combine the cauliflower, curry powder, and garlic salt in the skillet and stir. Pour in the coconut milk and chicken stock, then season with salt and pepper. Reduce the heat to low and cook for 30 minutes, stirring occasionally.
