Savory chickpea and rice dish with seasoned ground turkey, black beans, pine nuts, and fragrant spices like cumin, coriander, turmeric, and cayenne.
Ingredients:
  • 1 clove garlic, minced
  • 1 cup uncooked basmati rice
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cayenne pepper
  • 1 quart chicken stock
  • 1.5 pounds ground turkey
  • 2 (15 ounce) cans garbanzo beans (chickpeas), drained and rinsed
  • 2 (15 ounce) cans black beans, drained and rinsed
  • 1 bunch chopped fresh cilantro
  • 1 bunch chopped fresh parsley
  • 0.25 cup pine nuts
Instructions:
  • In a large saucepan over medium heat, warm olive oil. Add garlic and sauté for 1 minute. Mix in rice, cumin, coriander, turmeric, and cayenne pepper. Sauté for 5 minutes. Pour in stock, bring to a boil, then lower heat, cover, and simmer for 20 minutes.
  • In a large skillet over medium heat, sauté the ground turkey until it is crumbly and evenly browned.
  • Blend the savory turkey, garbanzo beans, black beans, fragrant cilantro, parsley, and crunchy pine nuts into the fluffy cooked rice. Season generously with salt and black pepper for an irresistible flavor.
