Enhance beef jerky with a savory soy and Worcestershire marinade, perfect for smoking over mesquite or hickory.
Ingredients:
5pounds boneless beef sirloin
2cups soy sauce
1cupwater
3dashesWorcestershire sauce
3tablespoons white sugar
3tablespoons salt
0.5 teaspoononion powder
0.25 teaspoongarlic powder
2teaspoons liquid smoke flavoring
mesquite or hickory wood chips, as needed for smoker
Instructions:
Slice beef into thin 1/4-inch pieces. Mix soy sauce, water, Worcestershire sauce, sugar, salt, onion powder, garlic powder, and liquid smoke. Pour mixture into a sealed bag. Add beef, coat well, seal the bag, and refrigerate for 12 hours.
Take the beef out of the marinade, gently dry it with paper towels, and let it sit for 30 minutes. Dispose of the marinade. While waiting, soak the wood chips.
Fire up the smoker and let it heat up for 10 minutes.
Lay out the beef on drying racks and smoke for 5 to 7 hours to your desired level of smokiness, adding more wood chips as needed.
