Enhance beef jerky with a savory soy and Worcestershire marinade, perfect for smoking over mesquite or hickory.
Ingredients:
  • 5 pounds boneless beef sirloin
  • 2 cups soy sauce
  • 1 cup water
  • 3 dashes Worcestershire sauce
  • 3 tablespoons white sugar
  • 3 tablespoons salt
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon garlic powder
  • 2 teaspoons liquid smoke flavoring
  • mesquite or hickory wood chips, as needed for smoker
Instructions:
  • Slice beef into thin 1/4-inch pieces. Mix soy sauce, water, Worcestershire sauce, sugar, salt, onion powder, garlic powder, and liquid smoke. Pour mixture into a sealed bag. Add beef, coat well, seal the bag, and refrigerate for 12 hours.
  • Take the beef out of the marinade, gently dry it with paper towels, and let it sit for 30 minutes. Dispose of the marinade. While waiting, soak the wood chips.
  • Fire up the smoker and let it heat up for 10 minutes.
  • Lay out the beef on drying racks and smoke for 5 to 7 hours to your desired level of smokiness, adding more wood chips as needed.
