Succulent pork stir-fry with colorful veggies and aromatic herbs for a flavorful, salt-free dish.
Ingredients:
  • 2 tablespoons olive oil
  • 0.5 pound pork loin, sliced and cut into thin strips
  • 0.5 red bell pepper, chopped
  • 0.5 yellow bell pepper, chopped
  • 0.5 green bell pepper, chopped
  • 1 carrot, peeled and chopped
  • 5 Brussels sprouts, trimmed and chopped
  • 4 cloves garlic, minced
  • 0.25 cup white onion, chopped
  • 4 sprigs Italian flat leaf parsley, chopped
  • 3 stalks celery, chopped
  • 2 (1/2 inch) pieces fresh ginger root, finely chopped
  • 0.5 (8 ounce) can water chestnuts, drained and chopped
  • 2 sprigs fresh mint, chopped
Instructions:
  • In a large skillet over medium-high heat, sizzle the pork strips in olive oil until nearly golden. Introduce the red, yellow, and green bell peppers, carrot, and Brussels sprouts, stir-frying to infuse with flavor. Drizzle in water to create a light sauce, and stir constantly until the peppers start to tenderize, approximately 5 minutes.
  • Lower the heat to medium and gently mix in garlic, onion, parsley, and celery. Let it simmer for 5 to 7 minutes, then add ginger and continue simmering for a few minutes. Finally, fold in water chestnuts and mint and simmer for an additional 2 to 3 minutes to meld the flavors. Serve and savor this delightful dish.
