Elevate your apple pie game with a flavorful blend of spices and potato starch for perfectly juicy and delicious slices.
Ingredients:
  • 8 large Golden Delicious apples - peeled, cored and cut into 1/8 inch slices
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons potato starch
  • 0.75 cup white sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon freshly grated nutmeg
  • 0.25 cup cold unsalted butter, cut into 1/4-inch pieces
  • 1 recipe pastry for a 10-inch double crust pie
  • 2 teaspoons milk
  • 1 tablespoon white sugar
Instructions:
  • Preheat your oven to 425 degrees F (220 degrees C) with a baking stone on the lower rack.
  • In a large mixing bowl, gently mix the apples with the lemon juice.
  • Combine the potato starch, 3/4 cup sugar, cinnamon, and nutmeg in a bowl, mixing well.
  • Roll out half of the pie crust pastry on a lightly floured surface, place it in a 10-inch pie plate, add half of the apples and butter, and sprinkle with half of the potato starch-cinnamon sugar mixture. Add the rest of the apples, top with butter pieces and sugar mixture. Roll out the remaining pie crust, cover the pie, seal the edges, poke a few holes, brush with milk, and sprinkle with 1 tablespoon sugar.
  • Place the pie on the baking stone in the preheated oven. Reduce the heat to 350°F (175°C) right away. Bake until the crust is golden brown, approximately 60 minutes. If needed, cover the edges with foil during the last 30 minutes to avoid excessive browning. Allow the pie to cool on a wire rack for 3 hours before serving.
