Milouda's Moroccan chicken with olives and preserved lemon

Effortlessly make flavorful Moroccan chicken in a slow cooker for a wholesome meal.
Ingredients:
1.9kg chicken thigh
2 medium red onions, sliced
5.00 gm ground ginger
5.00 gm ground cinnamon pinch saffron threads
765.00 gm chicken style liquid stock
187.50 ml pitted kalamata olives
1bunchcoriander, trimmed, roughly chopped
1bunchflat-leaf parsley, trimmed, roughly chopped
40.00 ml choppedpreserved lemons couscous, to serve
Instructions:
In a 7-litre slow cooker, heat 1 tablespoon of oil over medium-high heat. Brown the chicken in 3 batches for 3 to 4 minutes until golden all over. Then, transfer to a plate.
Heat the remaining oil in the slow cooker and sauté the onion and garlic until softened. Stir in the ginger, cinnamon, and saffron until fragrant. Add the chicken, juices, stock, salt, and pepper. Mix well and cover with the lid to continue cooking.
Begin by setting the slow-cooker to low heat. Allow the chicken to cook for 6 hours or until it becomes tender. Afterward, mix in olives, coriander, parsley, and lemon. Finally, serve the dish with couscous.
