Healthier banana strawberry muffins - naturally sweet and moist.
Ingredients:
  • 2 eggs
  • 0.5 cup unsweetened applesauce
  • 0.25 cup vegetable oil
  • 0.75 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 bananas, mashed
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 cup frozen sliced strawberries
Instructions:
  • Preheat the oven to 375°F (190°C) and prepare a muffin tin by greasing 12 large cups or lining them with paper liners.
  • Whisk together eggs, applesauce, oil, brown sugar, vanilla, and bananas in a large bowl. Add flour, baking soda, and cinnamon; mix until just moistened. Gently fold in strawberries until evenly distributed. Fill muffin cups to the top with batter.
  • Bake in the preheated oven for 20 minutes or until the muffin tops spring back when lightly pressed. Allow to cool before removing from the tins.
