Elevate the classic mimosa flavors into irresistible party cupcakes.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • 3/4 cup champagne or ginger ale
  • 1/2 cup orange juice
  • 1/3 cup vegetable oil
  • 3 egg whites
  • 1 teaspoon grated orange peel
  • 6 cups powdered sugar
  • 1/2 cup butter or margarine, softened
  • 3 tablespoons champagne or ginger ale
  • 3 tablespoons orange juice
  • Edible glitter or coarse white sparkling sugar
  • Grated orange peel
Instructions:
  • Preheat the oven to 350°F (or 325°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups.
  • In a large bowl, use an electric mixer to beat cupcake ingredients on low speed for 30 seconds, then on medium speed for 2 minutes, scraping the bowl occasionally. Divide the batter evenly among muffin cups, filling them about two-thirds full.
  • Bake for 18 to 23 minutes, or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then remove from the pan onto a cooling rack and let it cool completely.
  • In a large bowl, use an electric mixer to beat frosting ingredients until smooth and creamy. Transfer into a decorating bag with a large star tip. Pipe onto cupcakes, then sprinkle with glitter and orange peel. Store covered in the refrigerator.
