Enjoy flavorful Thai chicken mince served on crisp lettuce for a fun, interactive bite-sized experience.
Ingredients:
  • 18.40 gm vegetable oil
  • 4 garlic cloves, chopped
  • 1 tsp grated ginger
  • 1 long red chilli, seeds removed, chopped, plus extra finely sliced chilli to serve
  • 500g chicken breast mince
  • 4 mukrat lime leaves*, finely sliced
  • 48.80 gm fish sauce
  • 24.40 gm oyster sauce
  • 20.00 ml kecap manis*
  • 16.00 gm brown sugar
  • 200ml chicken style liquid stock
  • 250.00 ml Thai basil leaves*
  • 40.00 ml chopped roasted peanuts
  • 4 spring onions, thinly sliced
  • Leaves from 1 butter lettuce
  • Jasmine rice, boiled, to serve (optional)
Instructions:
  • In a sizzling wok, infuse the fragrant trio of garlic, ginger, and chili for a minute over medium-high heat. Turn up the heat, toss in the succulent chicken, and stir vigorously for 5-6 minutes until perfectly cooked through.
  • Stir in shredded lime leaves, fish sauce, oyster sauce, kecap manis, brown sugar, and stock. Cook for an additional 1-2 minutes. Remove from heat and gently fold in basil and nuts.
  • Arrange the chicken on a bed of crisp lettuce leaves, sprinkle with fresh spring onions and spicy chili slices. Serve with a side of fluffy boiled rice if desired.
