Savory bacon minestrone brimming with fresh veggies and pasta.
Ingredients:
  • 18.20 gm olive oil
  • 4 rashers middle bacon, rind removed, chopped
  • 1 medium brown onion, finely chopped
  • 1 celery stalk, trimmed, finely chopped
  • 1 large carrot, peeled, chopped
  • 1020.00 gm vegetable liquid stock
  • 3 large ripe tomatoes, chopped
  • 187.50 ml small shell dried pasta
  • 400g can Cannellini Beans, drained, rinsed
  • 2 small zucchini, chopped
  • 125.00 ml frozen peas
  • 125.00 ml roughly chopped fresh basil leaves
  • finely grated parmesan cheese, to serve
Instructions:
  • In a large saucepan over high heat, heat oil until shimmering. Add bacon, onion, celery, carrot, and garlic, cook and stir for 3 to 4 minutes until onion softens and bacon turns golden.
  • Combine stock, tomato paste, fresh tomatoes, and 1 cup of cold water in a pot and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes until vegetables are tender.
  • Combine the pasta, beans, zucchini, and peas in the pot. Cook for 15 minutes until the pasta is tender. Mix in the fresh basil. Sprinkle with cheese before serving. Enjoy!
