Minestrone soup

Savory bacon minestrone brimming with fresh veggies and pasta.
Ingredients:
18.20 gm olive oil
4rashersmiddle bacon, rind removed, chopped
1 medium brown onion, finely chopped
1celerystalk, trimmed, finely chopped
1 large carrot, peeled, chopped
1020.00 gm vegetable liquid stock
3 large ripe tomatoes, chopped
187.50 ml small shell dried pasta
400g can Cannellini Beans, drained, rinsed
2 small zucchini, chopped
125.00 ml frozen peas
125.00 ml roughly choppedfresh basil leaves
finely gratedparmesan cheese, to serve
Instructions:
In a large saucepan over high heat, heat oil until shimmering. Add bacon, onion, celery, carrot, and garlic, cook and stir for 3 to 4 minutes until onion softens and bacon turns golden.
Combine stock, tomato paste, fresh tomatoes, and 1 cup of cold water in a pot and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes until vegetables are tender.
Combine the pasta, beans, zucchini, and peas in the pot. Cook for 15 minutes until the pasta is tender. Mix in the fresh basil. Sprinkle with cheese before serving. Enjoy!
