Minestrone soup

Create a rustic vegetable soup with your favorite fresh vegetables and a herb-infused oil drizzle. Serve with crusty bread for a delicious meal.
Ingredients:
  • 800 g mixed veg (alliums, Mediterranean and celery)
  • 50 g garlic
  • 100 ml olive oil
  • 3 x 400 g tins of beans in water or brine
  • 1.2 litres tomato base sauce
  • 4 vegetable stock cubes
  • 180 g assorted dried pasta
  • 650 g leafy greens
Instructions:
  • Peel and slice the garlic. Heat olive oil in a large pan over medium heat. Add the chopped vegetables and cook covered for 15 minutes until soft and slightly browned, stirring occasionally. Drain beans and add to the pan with tomato sauce. Crumble in stock cubes, pour in 2.5 liters of water, and bring to a boil. Crush pasta in a bag, add to the pan, and simmer for 15 minutes. Chop leafy greens, add to the pan, and simmer until tender. Adjust seasoning, add more water if necessary, and enjoy!
