Cozy up with a comforting and nourishing minestrone soup this winter.
Ingredients:
  • 55g (1/3 cup) macaroni
  • 18.20 gm olive oil
  • 1 medium (about 150g) carrot, peeled, finely chopped
  • 1 x 425g can chunky crushed tomatoes
  • 250ml (1 cup) vegetable liquid stock
  • 1 x 400g can cannellini beans, rinsed, drained
  • 25g green beans, topped, diagonally cut into 3cm lengths
  • 20.00 ml finely grated parmesan
  • 4 crusty white bread rolls
Instructions:
  • Boil pasta in salted water as per package instructions until al dente. Drain.
  • Heat oil in a saucepan over medium heat. Cook onion and carrot for 3 minutes until onion softens. Add tomato and stock, bring to a boil, then simmer for 6-7 minutes until carrot is tender. Season with salt and pepper to taste.
  • Combine pasta, cannellini beans, and green beans in the pot. Cook for 3 minutes or until the green beans are vibrant green and tender-crisp. Serve the soup in bowls, sprinkled with Parmesan, and accompanied by rolls.
