Cozy up with a comforting and nourishing minestrone soup this winter.
Ingredients:
55g (1/3 cup) macaroni
18.20 gm olive oil
1 medium (about 150g) carrot, peeled, finely chopped
1 x 425g canchunky crushed tomatoes
250ml (1 cup) vegetable liquid stock
1 x 400g cancannellini beans, rinsed, drained
25g green beans, topped, diagonally cut into 3cm lengths
20.00 ml finely gratedparmesan
4crusty white bread rolls
Instructions:
Boil pasta in salted water as per package instructions until al dente. Drain.
Heat oil in a saucepan over medium heat. Cook onion and carrot for 3 minutes until onion softens. Add tomato and stock, bring to a boil, then simmer for 6-7 minutes until carrot is tender. Season with salt and pepper to taste.
Combine pasta, cannellini beans, and green beans in the pot. Cook for 3 minutes or until the green beans are vibrant green and tender-crisp.
Serve the soup in bowls, sprinkled with Parmesan, and accompanied by rolls.
