Hearty minestrone packed with veggies, full of flavor, paired with a side of creamy mac and cheese.
Ingredients:
2celerystalks, halved lengthways, thinly sliced
1leek, thinly sliced
1 large carrot, finely chopped
2desiree potatoes, chopped
11.20 gm tomato paste
2bay leaves
4fresh thymesprigs
1.5L chicken style liquid stock (or water)
400g can cannellini beans, rinsed, drained
2 small zucchini, finely chopped
100g frozen peas
100g baby spinach leaves
Choppedflat-leaf parsley, to serve
Instructions:
In a large heavy-based pan over medium-low heat, gently sauté celery, leek, garlic, and carrot in oil for 5 minutes, stirring occasionally.
Combine the potato, tomato paste, bay leaves, thyme, and stock in a pot. Bring to a boil over high heat, then simmer partially covered over medium-low heat for 20 minutes, or until the potato is tender.
Combine the beans, zucchini, peas, salt, and pepper in the pot and simmer for 6-8 minutes.
Combine the spinach into the mixture, portion the dish into heated bowls, season to taste, and garnish with fresh parsley before serving.
