Hearty minestrone packed with veggies, full of flavor, paired with a side of creamy mac and cheese.
Ingredients:
  • 2 celery stalks, halved lengthways, thinly sliced
  • 1 leek, thinly sliced
  • 1 large carrot, finely chopped
  • 2 desiree potatoes, chopped
  • 11.20 gm tomato paste
  • 2 bay leaves
  • 4 fresh thyme sprigs
  • 1.5L chicken style liquid stock (or water)
  • 400g can cannellini beans, rinsed, drained
  • 2 small zucchini, finely chopped
  • 100g frozen peas
  • 100g baby spinach leaves
  • Chopped flat-leaf parsley, to serve
Instructions:
  • In a large heavy-based pan over medium-low heat, gently sauté celery, leek, garlic, and carrot in oil for 5 minutes, stirring occasionally.
  • Combine the potato, tomato paste, bay leaves, thyme, and stock in a pot. Bring to a boil over high heat, then simmer partially covered over medium-low heat for 20 minutes, or until the potato is tender.
  • Combine the beans, zucchini, peas, salt, and pepper in the pot and simmer for 6-8 minutes.
  • Combine the spinach into the mixture, portion the dish into heated bowls, season to taste, and garnish with fresh parsley before serving.
