Mini Christmas pudding bites for a festive post-dinner treat.
Ingredients:
  • 200g dark chocolate, chopped
  • 700g fruit cake
  • 86.63 gm orange juice
  • 75.00 gm icing sugar mixture, sifted
  • 250g white chocolate melts
  • 40 assorted coloured mini jelly beans
Instructions:
  • Melt dark chocolate in a heatproof bowl set over a saucepan of simmering water, stirring until smooth.
  • In a large bowl, crumble the cake and mix in the dark chocolate, orange juice, and sugar until well combined. Cover and refrigerate for 20 minutes or until the mixture is firm enough to handle.
  • Take level tablespoons of cake mixture and shape them into balls. Place them on baking trays lined with baking paper, gently pressing down on the bases to flatten slightly for stability. Chill in the refrigerator until firm.
  • Melt white chocolate melts using the method described in step 1. Allow to cool for 10 minutes. Drizzle over puddings to create a 'custard' effect (refer to tip). Garnish with jelly beans.
