Mini lamb roasts marinated in red wine

"Aussie-style wine-marinated lamb roasts bursting with flavor."
Ingredients:
  • 375ml (1 1/2 cups) red wine
  • 23.40 gm wholegrain mustard
  • 4 garlic cloves, crushed
  • 4 fresh or dried bay leaves, torn
  • 4 (about 350g each) mini trim lamb round roasts
Instructions:
  • In a large glass or ceramic bowl, mix together the wine, mustard, garlic, and bay leaves. Add the lamb and ensure it is coated with the mixture. Cover the bowl and refrigerate for at least 6 hours, preferably overnight, remembering to turn the lamb occasionally for even marination.
  • Preheat your oven to 200°C. Remove the lamb from the marinade, then pat it dry with paper towels and season generously with salt and pepper.
  • 1. Heat oil in a large frying pan until sizzling. Brown lamb for 3-5 minutes. Transfer to ovenproof dish and bake for 25 minutes (or to your preferred doneness). Let it rest for 3 minutes, then slice and enjoy!
