Mini lemon, ginger & honey chicken skewers

Elevate chicken skewers with bold Asian flavors and a kick of spicy dipping sauce.
Ingredients:
  • 2 long red chillies, seeds removed, finely chopped
  • 6 spring onions, white part only, thinly sliced
  • 4 garlic cloves, finely chopped
  • 2cm piece ginger, finely grated
  • 175g honey
  • Juice of 3 lemons, plus lemon zest to serve
  • 250ml soy sauce
  • 1kg chicken breast fillets, trimmed, cut into 1.5cm cubes
  • 12.00 gm sesame seeds, toasted
  • 125ml soy sauce
  • 4 long red chillies, thinly sliced
  • 2 tsp sesame oil
  • 4 spring onions, thinly sliced
  • 40.00 ml rice wine vinegar
Instructions:
  • In a mixing bowl, mix together the chili, onion, garlic, ginger, honey, lemon juice, and soy sauce. Skewer about 4 pieces of chicken onto each small metal or soaked wooden skewer. Place the skewers in a glass or ceramic dish, pour the marinade over them, cover, and refrigerate for a minimum of 2 hours.
  • 1. Preheat the oven to 150°C and line 2 baking trays with baking paper. 2. Heat a lightly oiled chargrill pan over medium-high heat. Cook skewers in batches for 6-8 minutes, turning occasionally, until fully cooked. 3. Transfer the cooked skewers to the lined trays and keep warm in the oven while you cook the remaining skewers.
  • Prepare the dipping sauce by mixing all the ingredients in a bowl and then set it aside.
  • Garnish the skewers with sesame seeds and lemon zest and serve them warm with the dipping sauce.
