Mini lemon panna cotta tarts recipe

Indulge in tangy lemon panna cotta tarts for a delightful and satisfying snack.
Ingredients:
  • 2.25 gm gelatine powder
  • 60ml cream
  • 1 tsp finely grated lemon rind
  • 40.00 gm caster sugar
  • 185ml milk
  • 85g lemon curd
  • 2 x 150g pkts Make At Home Tart Shells*
  • 125ml cream
  • 2 passionfruit, halved
  • 2 pieces cranberry nut nougat, thinly sliced
  • 20.00 ml pistachios, coarsely chopped
Instructions:
  • In a small bowl, pour 1 tablespoon of warm water over the gelatine and let it dissolve.
  • In a medium saucepan on low heat, mix cream, lemon rind, sugar, vanilla, and milk and bring to a gentle simmer. Remove from heat and stir in gelatin mixture until dissolved. Allow the mixture to cool slightly, then strain through a fine sieve into a bowl. Mix in lemon curd until combined.
  • Arrange the tart shells on a serving plate. Evenly pour the lemon mixture into the shells. Chill in the fridge for 1 hour until set.
  • Whip the extra cream in a bowl with an electric mixer until soft peaks form, then spoon evenly over tarts. Top with passionfruit pulp and nougat, and sprinkle with pistachios before serving.
