Quick and tangy tarts made with condensed milk and only 3 ingredients, irresistibly easy and delicious.
Ingredients:
  • 250g pkt butternut snap biscuits
  • 395g can sweetened condensed milk
  • 60ml (1/4 cup) passionfruit pulp, plus extra, to serve
  • 80ml (1/3 cup) fresh lemon juice, strained
Instructions:
  • Preheat the oven to 180C/160C fan forced. Put one biscuit in each cavity of a 12-hole patty pan. Bake for 3 minutes, then gently press the softened biscuits into the holes to form the shells. To shape the shells, stack one tray over the other and press into the warm biscuits. Allow them to cool in the pan before transferring to a serving plate. Repeat the process with the remaining biscuits.
  • Combine condensed milk, passionfruit pulp, and lemon juice in a bowl, whisk until fully mixed. Place 12 biscuit cups back in the patty pan. Fill each cup with 1 tablespoon of the mixture. Bake for 10 minutes until just set. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Repeat for the rest of the biscuit cups and filling.
  • Drizzle each tart with an extra spoonful of passionfruit pulp before serving. Enjoy within 6 hours of preparation for peak freshness.
