Make an impressive Australian pavlova filled with whipped cream and fresh seasonal fruits.
Ingredients:
  • 2 egg whites
  • 110g caster sugar
  • 300ml thickened cream, whipped
  • 2 bananas, sliced
  • 125g strawberry
  • 2 passionfruit, pulped
Instructions:
  • 1. Preheat your oven to 150°C and line 2 baking trays with baking paper. 2. In a clean bowl, beat the egg whites with electric beaters until soft peaks form. 3. Gradually add caster sugar, beating well after each addition, until the mixture is thick and glossy, which should take about 5 minutes.
  • Drop generous spoonfuls of the mixture onto baking trays, shaping them into flat discs. Bake for 20-25 minutes until crispy. Allow to cool completely in the slightly open oven.
  • Finish the meringue with a dollop of cream, garnish with fresh fruit, and serve promptly.
