Mini raspberry friands

Almond-topped baby friands, perfect for special celebrations with friends.
Ingredients:
  • Melted butter, to grease
  • Plain flour, to dust
  • 195g (1 1/2 cups) pure icing sugar, sifted
  • 75g (1/2 cup) plain flour, sifted
  • 155g (1 1/2 cups) almond meal
  • 3 eggs, lightly whisked
  • 180g unsalted butter, melted, cooled
  • 100g frozen raspberries
  • 40.00 ml flaked almonds
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 180°C. Grease thirty 40ml-capacity mini muffin tins with melted butter and dust with plain flour.
  • In a bowl, mix together the sugar, flour, and almond meal. Create a well in the center and add the egg and butter. Stir until thoroughly combined.
  • Spread the batter evenly into the prepared pans. Place raspberries in the centers and generously sprinkle with flaked almonds.
  • Bake until light golden, about 15-20 minutes. Allow to cool in the pans for 5 minutes before transferring to wire racks to cool completely.
  • Sprinkle icing sugar over the friands before serving.
