Kid-friendly Minnie Mouse cupcakes with Oreo cream cheese frosting - simple and delightful!
Ingredients:
  • 36 chocolate sandwich cookies (such as Oreo®)
  • 2 tablespoons all-purpose flour
  • 3.3333332538605 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.75 teaspoon salt
  • 0.75 cup butter, room temperature
  • 2.5 cups white sugar
  • 1.5 cups 1% milk
  • 3 teaspoons vanilla extract
  • 5 egg whites
  • 0.75 cup salted sweet cream butter, softened
  • 3 teaspoons Mexican vanilla extract
  • 6 cups powdered sugar
  • 1.5 (8 ounce) packages cream cheese, softened
  • 4 drops pink food coloring (such as Wilton® Rose Icing Color), or as desired
  • 2 packages mini chocolate sandwich cookies (such as Oreo®)
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 36 cupcake cups with paper liners.
  • Carefully twist apart 36 cookies. Divide the side without cream into quarters and toss in 2 tablespoons of flour to prevent sticking. Place the cream-side-up cookies in the bottom of each cupcake cup.
  • Combine 3 1/3 cups of flour, baking powder, and salt, then whisk them together in a separate bowl.
  • Using an electric mixer with a flex edge attachment, beat butter until creamy and fluffy. Add sugar, milk, and vanilla extract using a wire attachment. Slowly mix in flour mixture until well blended with the flex edge attachment. Beat in egg whites for 2 minutes, then gently fold in quartered cookies.
  • Carefully transfer the batter into the lined muffin cups, ensuring they are filled up to 3/4 of the way.
  • Bake in the preheated oven for 20 minutes until a toothpick inserted into the center comes out clean. Then, cool on a wire rack for 30 minutes before serving.
  • Blend butter and vanilla extract with an electric mixer until fully combined in a mixing bowl. Gradually add powdered sugar, mixing slowly to incorporate. Increase speed to medium-high, beating until frosting is dry, scraping the sides of the bowl as needed.
  • Swirl two toothpicks into food coloring, then blend into frosting. Spread frosting on cupcakes and garnish with mini chocolate cookies.
