Decadent mint chocolate frosting, perfect for pairing with rich mayonnaise cake. Sinfully delicious!
Ingredients:
  • 4 cups confectioners' sugar
  • 1 teaspoon mint extract
  • 4 tablespoons milk
  • 2 (1 ounce) squares unsweetened chocolate
Instructions:
  • Cream together 1 1/3 cups of sugar and salt with 1/2 cup of butter or margarine in a large bowl. Add mint extract, 2 tablespoons of milk, and the rest of the sugar. Slowly mix in the remaining milk until you reach your desired frosting consistency.
  • Combine unsweetened chocolate and 2 tablespoons of butter or margarine in a microwave-safe bowl, then heat and stir until melted. Alternatively, you can use a double boiler. Feel free to double the glaze if you prefer a thicker coating.
  • Frost cake, piping a decorative scallop of frosting around the top edge to prevent glaze from dripping. Pour glaze over the cake and refrigerate until set.
