Decadent mint chocolate cookies topped with a mint wafer swirl.
Ingredients:
  • 0.75 cup butter
  • 1.5 cups packed light brown sugar
  • 2 teaspoons water
  • 1.75 cups mint chocolate chips
  • 2 eggs
  • 2.5 cups all-purpose flour
  • 1.25 teaspoons baking soda
  • 0.5 teaspoon salt
  • 20 chocolate covered thin mints
Instructions:
  • In a small saucepan, melt together the butter, brown sugar, water, and mint chocolate chips over low heat, stirring occasionally. Once melted, transfer the mixture to a medium bowl and let it cool for approximately 10 minutes before using.
  • Gently add the eggs into the rich chocolate mixture one at a time. Mix the flour, baking soda, and salt, then fold into the chocolate batter. Cover the dough and let it chill for 1 hour.
  • Preheat the oven to a cozy 350 degrees F (175 degrees C). Roll the dough into charming 1-inch balls and space them 1 1/2 inches apart on an ungreased cookie sheet.
  • After baking for 12 to 13 minutes in the preheated oven, top each cookie immediately with half a mint candy. Allow them to sit for 30 seconds before swirling with a toothpick. Cool on wire racks.
