Mint-Chocolate Chip Cake

Decadent mint-chocolate cake with luscious ganache and creamy mint-chocolate chip frosting, ideal for any celebration.
Ingredients:
  • 1.75 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1.5 teaspoons baking soda
  • 1.5 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1 teaspoon peppermint extract
  • 1 cup boiling water
  • 0.5 cup milk
  • 1 (32 ounce) package confectioners' sugar
  • 0.5 teaspoon green gel food coloring, or as needed
  • 1 cup miniature semisweet chocolate chips
  • 0.5 cup butter, softened
  • 10 (1 ounce) squares semisweet chocolate
Instructions:
  • Heat the oven to 350 degrees F (175 degrees C) and butter a 9x13-inch baking dish.
  • In a medium bowl, mix together sugar, flour, cocoa, baking soda, baking powder, and salt. Add eggs, milk, oil, vanilla extract, and peppermint extract, then use an electric mixer until smooth. Stir in boiling water and pour batter into the baking dish.
  • Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool for 10 to 15 minutes before transferring to a wire rack to cool completely.
  • As the cake cools, mix milk and peppermint extract in a small bowl. In a separate bowl, use an electric mixer to cream butter until smooth. Gradually add confectioners' sugar and the peppermint-milk mix while beating. Blend in green food coloring to your liking. Beat the frosting on high until fluffy (2 to 3 minutes). Divide the frosting between two bowls. Stir chocolate chips into half of the frosting with a spoon to make mint-chocolate chip frosting. Set aside.
  • Spread the refreshing mint frosting on the cooled cake, omitting chocolate chips. Chill the cake in the refrigerator until the frosting sets.
  • Combine rich, decadent chocolate squares and velvety butter in a double boiler. Mix until completely melted, then take it off the heat. Stir the ganache vigorously until it turns into a lusciously smooth mixture.
  • Take the cake out of the refrigerator. Drizzle the entire cake with ganache, then chill until completely set, approximately 30 minutes.
  • Take the chilled cake out of the refrigerator and generously coat the sides with luscious mint chocolate chip frosting.
