Minted pea potato mash

Elevate traditional mashed potatoes with a fresh mint and pea swirl.
Ingredients:
  • 1kg Sebago potatoes, peeled, chopped
  • 40g butter, chopped
  • 125ml (1/2 cup) milk, warmed
  • 250.00 ml peas, cooked and mashed
  • Fresh mint, chopped
  • Goat's feta, crumbled, to serve
Instructions:
  • In a saucepan, submerge the potato in cold water and bring to a gentle boil over medium heat. Simmer for 25 minutes until tender. Drain and return to the pan. Cook over low heat for 2-3 minutes until dry. Mash the potato until smooth with a potato masher and slowly mix in the butter and milk.
  • Gently mix in peas and fresh mint, then garnish with extra small mint leaves and crumbled feta cheese. Finish with a sprinkle of black pepper.
