Mint chocolate cookie crust cheesecake bites: decadent, creamy mini desserts perfect for parties.
Ingredients:
  • 1 (10 ounce) package chocolate-covered mint cookies (such as Girl Scout Thin Mints®), finely crushed
  • 4 (8 ounce) packages cream cheese, softened
  • 1.5 cups white sugar
  • 0.75 cup milk
  • 4 eggs, at room temperature
  • 1 cup sour cream
  • 0.25 cup all-purpose flour
  • 1 tablespoon vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin by lining it with cupcake liners.
  • Evenly distribute a generous spoonful of crushed cookies at the bottom of each muffin cup.
  • In a large bowl, use an electric mixer to blend cream cheese and sugar until smooth. Stir in milk. Add eggs one at a time, mixing well after each addition. Mix in sour cream, flour, and vanilla extract until smooth. Fill each muffin cup halfway with batter.
  • Bake the cupcake in the preheated oven until the center is set, 25 to 35 minutes. Allow to cool for 1 to 2 hours before serving.
