Miso broth with silken tofu and Asian greens

Whip up a quick and delicious vegetarian tofu soup in no time!
Ingredients:
  • 1L (4 cups) vegetable liquid stock
  • 24.00 gm brown miso paste*
  • 1 bunch baby bok choy
  • 1 bunch choy sum
  • 200g silken tofu, cut into small cubes
  • 1 pack enoki mushrooms*, trimmed
Instructions:
  • In a large saucepan, bring vegetable stock to a boil over high heat. Lower the heat to low and stir in miso paste until well combined.
  • After tossing in the bok choy and choy sum leaves, take the saucepan off the heat. Serve the broth and greens into 4 bowls.
  • Layer the tofu on top and decorate with the enoki mushrooms.
