Quick and easy vegetarian miso noodle dish, perfect as a main or side dish. Ready in just 25 minutes.
Ingredients:
  • 1 (7 ounce) package dried udon noodles
  • 1 tablespoon salted butter
  • 1 tablespoon miso paste
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • 1 clove garlic, finely chopped
  • 1 cup cubed tofu
  • 0.5 cup water
  • 3 cups fresh spinach
  • 3 stalks green onions, minced
  • 1 tablespoon soy sauce
  • 1 dash Sriracha sauce, or to taste
  • 0.25 teaspoon sesame seeds, or to taste
Instructions:
  • Bring a generously salted large pot of water to a boil. Add udon noodles and cook until partially cooked, stirring occasionally, for 5 to 7 minutes.
  • Combine butter, miso paste, sesame oil, and honey in a heated wok until sizzling. Saute garlic until fragrant, then add tofu and cook for 1 minute.
  • After draining the udon noodles, transfer them to a sizzling wok with water. Cook and continuously stir for 3 minutes. Introduce spinach and green onions, ensuring they blend in until the spinach is perfectly wilted. Lastly, incorporate the soy sauce into the mix.
  • Divide the soup into two bowls. Garnish with a spicy Sriracha drizzle and a sprinkle of sesame seeds.
