Ingredients:
  • olive oil
  • 300g mushrooms, washed, drained and thinly sliced
  • 4 rashers of bacon, thinly sliced
  • 8 eggs, lightly beaten
  • 20.00 ml chopped basil
  • 20.00 ml chopped chives
  • salt and cracked black pepper
  • 1/3 finely grated parmesan
  • salad, to serve
Instructions:
  • Preheat the oven grill. In a medium non-stick frying pan over medium-low heat, sauté mushrooms and bacon in olive oil for 5 minutes or until golden.
  • Combine eggs, basil, parsley, chives, salt, and cracked black pepper in a medium bowl. Pour mixture over the mushrooms.
  • Simmer gently over low heat for 10-12 minutes until almost fully set on top.
  • Top with savory Parmesan cheese, transfer to the preheated grill to achieve a beautifully golden, fully set surface. Rest for 5 minutes, then slice and enjoy with a fresh side salad.
