Mixed potato gratin

Try classic mixed potato gratin for a cozy Christmas meal.
Ingredients:
  • 772.50 gm milk
  • 1kg desiree potatoes, peeled, thinly sliced
  • 850g sweet potato, peeled, thinly sliced
  • 63.13 gm thickened cream
  • 250.00 ml finely grated gruyere cheese
  • 187.50 ml fresh breadcrumbs
Instructions:
  • In a large saucepan, combine milk and garlic and bring to a boil over high heat. Season with salt and pepper, then add desiree potato. Reduce heat to low and simmer, stirring occasionally, for 18 minutes or until the potato is tender.
  • In a large heatproof, microwave-safe bowl, cover the sweet potato and microwave on high for 5 to 6 minutes until tender yet still firm.
  • Prepare a 5 cup-capacity ovenproof dish by greasing it. Spread half of the potato mixture in the dish, then layer sweet potato on top. Add the remaining potato mixture, and finish by pouring the cream over the top.
  • Preheat the grill on high and position the rack 20cm away from the heat. In a bowl, mix together the cheese and breadcrumbs. Sprinkle the potatoes with the cheese mixture and grill for 8 minutes or until the top is golden and crisp. Serve alongside roasted turkey and pork.
