Spicy beef stew made with canned tomatoes, green chilies, and hot sauce in a slow cooker.
Ingredients:
all-purpose flour
1pinchgarlic salt, or to taste
groundblack pepper to taste
2.5 pounds beef stew meat, cut into cubes
1tablespoonolive oil, or more if needed
3cups water
1 (1.5 ounce) packagedry beef stew seasoning mix
2 large potatoes, cut into cubes
1 small onion, chopped
1 (10 ounce) candiced tomatoes with green chile peppers (such as RO*TEL®)
1teaspoonhot pepper sauce (such as Frank's RedHot®)
1cupfrozen corn
Instructions:
Combine the flour, garlic salt, and black pepper in a shallow dish.
Coat beef cubes evenly by gently pressing them into the flour mixture.
In a skillet over medium heat, sizzle beef in batches in olive oil until fully browned, about 5 minutes per batch. Transfer each batch of browned beef to a bowl using a slotted spoon.
Combine water and beef stew seasoning in the slow cooker until the seasoning is fully dissolved. Mix in browned beef, potatoes, onion, diced tomatoes with green chile peppers, and hot pepper sauce.
Cook on High for 3 1/2 to 4 1/2 hours. Stir in frozen corn and cook for an additional 30 minutes until the corn is heated through.
