Decadent and easy-to-use modeling chocolate surpasses fondant for stability and flavor.
Ingredients:
  • 1 (12 ounce) package white chocolate chips
  • 0.75 cup corn syrup
  • 1 drop gel food coloring as desired
  • 0.25 cup cornstarch, or as needed
Instructions:
  • Melt white chocolate in a microwave-safe bowl, stirring at 30-second intervals until smooth, about 1 to 3 minutes.
  • Warm corn syrup until it nearly matches the temperature of the melted chocolate, then mix it with the chocolate. Even if it starts to harden and becomes challenging to stir, ensure thorough mixing. Allow the mixture to firm up in a cool spot, like the refrigerator or countertop, for about 2 hours.
  • Take a portion of the dough and mold it with your hands until it reaches a Play-Doh consistency. Incorporate gel food coloring to your liking.
  • Sprinkle cornstarch on the countertop and rolling pin. Place the ball of modeling chocolate on the dusted surface and roll it out to the desired size. For easy transfer onto the cake, roll the chocolate onto the rolling pin.
