Tangy citrus-marinated Cuban mojo shrimp make for a simple and flavorful one-pan meal.
Ingredients:
  • 0.25 cup extra-virgin olive oil
  • 3 medium limes, zested and juiced
  • 1 medium orange, zested and juiced
  • 6 cloves garlic, finely chopped
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon ground cumin
  • 1 pound large shrimp - peeled, deveined, and butterflied
  • 2 tablespoons extra-virgin olive oil
Instructions:
  • Prepare the marinade by combining oil, lime juice and zest, orange juice and zest, garlic, oregano, salt, pepper, and cumin in a glass or ceramic bowl and whisking until well mixed.
  • Coat shrimp in marinade, cover, and refrigerate for 4 to 6 hours.
  • Remove the marinated shrimp, allowing any extra marinade to drip off, and set aside the marinade for later use.
  • In a large skillet over medium heat, sauté shrimp in oil until bright pink and opaque, for about 4 to 7 minutes. Remove shrimp and set aside on a plate.
  • Gently pour the marinade into the skillet and simmer over medium-low heat until it slightly thickens, which should take about 5 to 8 minutes. Serve the sauce alongside the shrimp.
