Zesty black bean and brown rice bowls with a flavorful mojo twist, perfect for a quick and delicious meal.
Ingredients:
  • 4 cups water
  • 2 cups brown rice
  • salt
  • 2 (15 ounce) cans black beans
  • 1 onion, chopped
  • 0.25 teaspoon ground cayenne pepper
  • 0.5 cup cilantro, chopped
  • 0.5 lime, juiced
  • 4 garlic cloves, minced
  • 0.5 white onion, sliced
  • 0.25 cup olive oil
  • 0.25 cup lemon juice
  • 2 tablespoons orange juice
  • 0.5 teaspoon ground cumin
  • 1 cup grated Cheddar cheese
  • 1 cup fresh salsa
  • 1 cup sour cream, or to taste
Instructions:
  • Combine rice, water, and a pinch of salt in a 4-quart saucepan. Bring to a boil, then cover, reduce heat, and simmer for 40-45 minutes until tender.
  • Drain most of the liquid from the beans, then mix with onion and cayenne in a small saucepan. Simmer covered for 15 to 20 minutes. Stir in cilantro, lime juice, and remove from heat.
  • In a small bowl, create a flavorful garlic paste by combining garlic and salt. Blend the garlic paste with sliced onion, olive oil, lemon juice, orange juice, and cumin until smooth in an electric blender. Transfer the mixture to a small nonstick skillet and gently simmer for 5 minutes, stirring frequently to prevent burning.
  • In a large bowl, build layers of rice, mojo Cubano, black beans, Cheddar cheese, salsa, and sour cream. Repeat for each serving.
