Molly's Vegetarian Spaghetti Squash

Satisfying veggie dinner with spaghetti squash "pasta" and tasty veggie burger crumbles for the family.
Ingredients:
  • 1 (2 pound) spaghetti squash, halved lengthwise and seeded
  • 2 (12 ounce) packages ground beef vegetarian substitute (such as MorningStar®)
  • 1 teaspoon Cajun seasoning, or more to taste
  • 1.5 cups pasta sauce
  • 3 slices Cheddar cheese
Instructions:
  • Place each squash half in a microwave-safe bowl, cover with water, and seal with plastic wrap.
  • Individually microwave each bowl on high for 10-12 minutes until heated through.
  • Heat a large skillet over medium heat, then add the ground beef substitute and sprinkle it with Cajun seasoning. Cook until crumbly and starting to brown, about 5 to 7 minutes. Stir in the pasta sauce and reduce the heat to low.
  • Using a fork, scrape out the spaghetti squash strands and mix them into the pasta sauce. Top with cheese slices to melt and serve right away.
