Elevate picnics and parties with our delicious homemade Mom's Baked Beans, better than canned!
Ingredients:
  • 8 cups water
  • 1 package (1 lb) dried baby lima beans, about 2 1/3 cups, sorted and rinsed
  • 6 oz cured salt pork, cut into 4 pieces
  • 1 medium onion, chopped (1/2 cup)
  • 3 1/2 cups water
  • 1/2 cup condensed tomato soup (from 10 ¾-oz can)
  • 3 tablespoons packed brown sugar
  • 3 tablespoons molasses
  • 1 teaspoon salt
  • 1/2 teaspoon yellow mustard
Instructions:
  • In a 5-quart Dutch oven, bring 8 cups of water and beans to a boil over medium-high heat. Boil without a lid for 2 minutes. Remove from heat and allow it to sit for 1 hour before draining.
  • Preheat the oven to 350°F. In the 5-quart Dutch oven, sauté the salt pork over medium-high heat for 5 to 6 minutes until lightly browned. Add the rest of the ingredients and bring to a boil over medium-high heat. Cover the pot and bake in the oven for 1 hour.
  • Uncover and bake the beans for 1 to 1 ¼ hours, stirring occasionally, until they reach your desired level of tenderness. Consider transferring them to a casserole dish for serving.
