Decadent au gratin potatoes with melty Cheddar cheese - ideal with ham or roast.
Ingredients:
  • 6 potatoes
  • 0.5 cup butter
  • 3 green onions, chopped, or more to taste
  • 1 pint sour cream
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup shredded sharp Cheddar cheese
  • 1 teaspoon salt
Instructions:
  • In a large pot, cover the potatoes with salted water and bring to a boil. Reduce heat and simmer for about 20 minutes until tender. Drain, cool, peel, and slice into thin rounds.
  • In a saucepan over medium heat, melt butter. Saute green onions in the butter until tender, about 3 to 4 minutes. Stir in sour cream, condensed chicken soup, cheddar cheese, and salt until well combined.
  • Preheat oven to 375°F (190°C) for a perfectly cooked dish.
  • Layer the potato slices at the base of an 8x8-inch baking pan and generously pour the velvety cheese sauce over them.
  • Bake until the edges turn golden brown, approximately 45 minutes in the preheated oven.
