Mini berry pies topped with pre-made crusts, served with berry sauce and ice cream or whipped topping.
Ingredients:
  • 1.25 cups white sugar
  • 0.25 cup cornstarch
  • 0.25 teaspoon salt
  • 1.5 teaspoons ground cinnamon, divided
  • 5 cups frozen mixed berries
  • 1.5 tablespoons lemon juice
  • 1 (15 ounce) package pastry for a 9-inch pie crust
  • 2 tablespoons butter, softened, divided
Instructions:
  • Preheat your oven to 425°F (220°C) and place four 4-inch ramekins on the counter.
  • In a bowl, mix together sugar, cornstarch, salt, and 1 1/4 teaspoons of cinnamon. Add mixed berries and gently toss to coat. Drizzle lemon juice over the berries.
  • Using a ramekin as a guide, cut out four 4-inch circles from the prepared crust for pie tops.
  • Divide the berry mixture evenly among the ramekins, making sure to include a generous amount of the sugar and spices. Set aside the extra berry mixture for later use.
  • Place a dollop of butter on top of each filled ramekin before covering them with pie crusts. Using a sharp knife, make four slits on the top of each crust. Arrange the ramekins on a baking sheet.
  • Bake until the crust is beautifully golden brown and the filling is bubbling, usually around 30 minutes in the preheated oven.
  • Stir in the remaining 1/4 teaspoon of cinnamon into the reserved berry mixture. Microwave for 1 minute to create a luscious berry sauce, then stir. Serve the pies with the flavorful sauce.
