Mom's Basic Vegetable Beef Stew

Hearty winter vegetable beef stew packed with potatoes, onions, carrots, and celery for a comforting meal.
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • 2 onions, roughly chopped, divided
  • 4 carrots, cut into 1/2-inch rounds
  • 0.25 teaspoon red pepper flakes
  • 0.25 teaspoon Greek seasoning (such as Cavender's®)
  • 1 pinch dried rosemary
  • 1 pinch ground thyme
  • 1 pinch dried basil
  • 1 pinch Italian seasoning
  • 1 bay leaf
  • salt and ground black pepper to taste
  • 1 (32 ounce) can diced tomatoes with juice
  • 1 pound ground beef
  • 4 potatoes, peeled and cut into chunks
  • 1 stalk celery, chopped
Instructions:
  • Drizzle olive oil in a large stockpot to coat the bottom generously. Add onion, carrots, garlic, red pepper flakes, Greek seasoning, rosemary, thyme, basil, Italian seasoning, bay leaf, salt, and pepper. Sauté the mixture over medium heat until the onion is soft and lightly browned, around 15 minutes.
  • Cover the onion mixture with diced tomatoes, then combine with ground beef, breaking it apart with a wooden spoon and stirring thoroughly. Bring to a boil and simmer until the beef is cooked through and the carrots are tender, approximately 10 minutes.
  • Combine potatoes, the rest of the onion, and celery into the tomato mixture. Simmer until potatoes are tender for 15 to 20 minutes. Set aside off the heat to rest for 20 to 30 minutes.
