Colorful vegetable and pasta macaroni salad with a sweet and creamy mayo dressing.
Ingredients:
  • 16 ounces uncooked elbow macaroni
  • 4 carrots, shredded
  • 1 large red onion, chopped
  • 0.5 green bell pepper, seeded and chopped
  • 0.5 red bell pepper, seeded and chopped
  • 1 cup chopped celery
  • 2 cups mayonnaise
  • 1 (14 ounce) can sweetened condensed milk
  • 0.5 cup white sugar
  • 0.5 cup white vinegar
Instructions:
  • Assemble all of your ingredients.
  • 1. Bring a large pot of lightly salted water to a boil. Cook elbow macaroni for about 8 minutes, stirring occasionally, until al dente. Rinse with cold water, drain, and set aside.
  • Combine carrots, red onion, bell peppers, and celery in a large serving bowl. Stir in mayonnaise, condensed milk, sugar, vinegar, salt, and pepper until well blended.
  • Combine the macaroni gently, ensuring it's evenly coated, then cover and chill in the fridge for a minimum of 8 hours.
