Mom's Broccoli Cheese Soup

Kid-approved creamy broccoli cheese soup for veggie lovers.
Ingredients:
  • 3 (14.5 ounce) cans chicken broth
  • 1 head broccoli, chopped
  • 1 head broccoli, finely chopped
  • 0.5 cup shredded carrots
  • 6 tablespoons salted butter, cubed
  • 1 medium onion, thinly sliced
  • 6 tablespoons all-purpose flour, or as needed
  • 2 cups milk
  • 0.5 (8 ounce) package processed cheese food (such as Velveeta®), cubed
Instructions:
  • In a large pot, bring the chicken broth to a gentle simmer. Add the broccoli and carrots to the pot and let them simmer for 5 minutes.
  • In a large skillet over medium heat, melt butter until bubbly. Add onion and saute until tender, for approximately 5 minutes. Sprinkle in flour gradually, one tablespoon at a time. Continue stirring until a golden roux is achieved, which should take around 2 minutes. Gradually pour in milk, 1/2 cup at a time, stirring constantly. Allow it to come to a boil and cook until a thickened gravy forms, roughly 2 minutes.
  • Gradually pour the rich onion gravy into the broccoli blend while stirring constantly. Let it simmer gently, then add the creamy processed cheese. Keep simmering and stirring until the cheese is melted, approximately for 5 minutes. Be careful not to let the soup boil to prevent the cheese from separating.
