Easy stovetop butter bean soup with carrots, celery, and onions for a comforting meal.
Ingredients:
  • 1 Tablespoon olive oil
  • 1 small onion, chopped
  • 1 large carrot, chopped
  • 2 stalks celery, sliced
  • 1/4 teaspoon dried marjoram
  • 1/4 teaspoon dried parsley flakes
  • 1/4 teaspoon dried thyme
  • 5 cups chicken broth
  • 4 (15.5 ounce) cans butter beans, drained
  • 1 Tablespoon distilled white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
Instructions:
  • In a big stock pot over medium-high heat, warm up olive oil. Add onion, carrot, and celery, and sauté until the onion turns translucent, which should take about 3 minutes.
  • Add the aromatic combination of garlic, marjoram, parsley, and thyme. Saute until fragrant for about 2 minutes.
  • Combine chicken broth, butter beans, vinegar, salt, and pepper in a pot and bring to a boil. Simmer for 30 minutes, then ladle into bowls and serve.
