Mushroom-infused tomato sauce envelops tender chicken, a classic Italian dish perfect with pasta.
Ingredients:
  • 2 cups all-purpose flour for coating
  • 0.25 teaspoon ground black pepper
  • 1 (4 pound) chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 0.5 teaspoon dried oregano
  • 0.5 cup white wine
  • 2 cups fresh mushrooms, quartered
  • salt and pepper to taste
Instructions:
  • In a plastic bag, mix the flour, salt, and pepper. Add chicken pieces and coat them with the flour mixture. Heat oil in a large skillet with a lid. Fry chicken until golden brown on both sides. Remove from skillet.
  • Saute onion, garlic, and bell pepper in the skillet until the onion is slightly browned. Add chicken back to the skillet along with tomatoes, oregano, and wine. Cover and simmer over medium low heat for 30 minutes.
  • Toss in the mushrooms and season with salt and pepper to your liking. Let it simmer for an additional 10 minutes.
