Mom's Chocolate Meringue Pie

Indulgent chocolate custard pie topped with sweet meringue - a chocolate lover's dream!
Ingredients:
  • 0.75 cup white sugar
  • 5 tablespoons unsweetened cocoa powder
  • 3 tablespoons cornstarch
  • 2 cups milk
  • 3 large eggs
  • 1 (9 inch) pie crust, baked
  • 0.25 teaspoon cream of tartar
  • 6 tablespoons white sugar
Instructions:
  • Prepare all the ingredients. Preheat the oven to 350 degrees F (175 degrees C). Separate the eggs and save the whites for the meringue.
  • In a saucepan, combine sugar, cocoa, and cornstarch. Slowly whisk in milk. Cook over medium-high heat until thick and bubbly, about 4 to 5 minutes. Lower the heat to medium-low and cook for an additional 2 minutes, stirring constantly. Remove from heat.
  • Temper the egg yolks by slowly pouring 1 cup of the hot filling while whisking vigorously to prevent curdling. Pour the egg mixture back into the saucepan and whisk until well combined with the filling.
  • Place the saucepan over medium heat until it gently boils. Stir and cook for 2 minutes. Remove from heat and add the vanilla. Pour the warm filling into the crust.
  • Create the meringue: Whip the saved egg whites and cream of tartar in a glass, metal, or ceramic bowl until soft peaks form.
  • Slowly incorporate the sugar, then beat until stiff peaks form.
  • Evenly distribute the mixture over the hot filling, ensuring it reaches all the way to the crust.
  • Bake until the meringue turns golden in the preheated oven, about 12 to 15 minutes.
