Delicious zucchini cookies with chocolate chips - a perfect way to enjoy summer squash!
Ingredients:
  • 4 cups all-purpose flour
  • 6 tablespoons cocoa powder
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 2 cups white sugar
  • 1 cup margarine, softened
  • 2 cups grated zucchini
  • 1 cup chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then combine flour, cocoa powder, baking soda, cinnamon, cloves, and salt in a bowl.
  • Cream together sugar and margarine using an electric mixer until smooth in a large bowl. Incorporate the first egg thoroughly, then add vanilla and the last egg. Mix in zucchini until evenly distributed. Gently fold in the flour mixture until just combined. Carefully mix in the chocolate chips. Form walnut-sized balls with the dough and place them 2 inches apart on ungreased baking sheets.
  • Bake in batches in the preheated oven for about 10 minutes until the edges turn golden. Let the cookies cool on the baking sheet for 1 minute before transferring to a wire rack to cool completely.
