Mom's Egg Rolls with Sweet and Sour Sauce

Whip up tasty beef egg rolls in just 1 hour. Perfect with our tangy sweet and sour sauce on the side.
Ingredients:
  • Sweet and Sour Sauce
  • 3/4 cup sugar
  • 1/3 cup ketchup
  • 2/3 cup water
  • 1 tablespoon soy sauce
  • 1/2 cup vinegar
  • 3 1/2 tablespoons cornstarch
  • 1/3 cup water
  • 1 lb ground beef
  • 1/2 cup chopped white onion
  • 3 green onions, chopped
  • 1 bag (16 oz) coleslaw mix
  • Soy sauce
  • 1 package (1 lb) egg roll skins
  • Vegetable oil
Instructions:
  • In a 1-quart saucepan, combine sugar, ketchup, 2/3 cup water, soy sauce, and salt. Cook for 5 minutes, then stir in the vinegar.
  • Combine cornstarch with cold water in a small bowl. Pour mixture into the sauce and cook until it thickens.
  • In a large skillet over medium heat, cook ground beef, onion, and green onions until beef is fully cooked. Discard any excess fat.
  • Mix in coleslaw blend and drizzle soy sauce around the top of the mixture twice. Taste for saltiness and adjust if needed. Heat through completely.
  • As the cabbage mixture simmers, lay out egg roll skins on a spacious work surface. Spoon a generous serving spoonful of beef mixture onto the center of each skin. Fold up the bottom corner, tuck in the side corners, and roll tightly. Finally, fold down the top corner and seal with a dab of water.
  • Heat oil in a small skillet until hot. Fry egg rolls until crispy, then remove and shake off excess oil.
