Cheesy funeral potatoes with a crispy cornflake topping - the ultimate comfort dish.
Ingredients:
  • 3 tablespoons butter
  • 0.5 cup finely chopped onion
  • 1 teaspoon chicken bouillon granules
  • 1 (20 ounce) package frozen hash brown potatoes, thawed
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) container sour cream
  • 2 cups shredded Cheddar-Monterey Jack cheese blend
  • 1 cup shredded sharp Cheddar cheese
  • 1.5 cups crushed cornflakes cereal
  • 0.25 cup butter, melted
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan.
  • In a skillet over medium heat, melt the butter and sauté the onion until softened and translucent, about 5 minutes. Then, lower the heat and stir in the bouillon granules and pepper until fully dissolved.
  • Combine potatoes, condensed soup, sour cream, and both cheeses in a large bowl. Mix until fully incorporated, then spread the mixture evenly into the prepared pan.
  • In a bowl, mix cornflakes and melted butter until well combined. Sprinkle this crispy topping over the potato mixture.
  • Bake in the preheated oven for about 45 minutes until bubbly.
