Mom's Hearty Beef Stew with Dumplings

Savory beef stew slow-cooked with vegetables and fluffy dumplings on top.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 2 pounds cubed beef stew meat
  • 1 onion, coarsely chopped
  • 2 teaspoons steak seasoning (such as Montreal Steak Seasoning®), divided
  • 2 stalks celery, each cut into 4 pieces
  • 6 cups water, divided, or as needed
  • 4 (.85 ounce) packages dry brown gravy mix
  • 4 carrots, peeled and quartered
  • 1 small turnip, peeled and quartered
  • 7 potatoes, peeled and quartered
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.75 teaspoon salt
  • 3 tablespoons shortening
Instructions:
  • To make the stew: In a large heavy pot or Dutch oven, heat oil over medium-high heat until shimmering. Add beef and onion, then sprinkle with 1 teaspoon steak seasoning. Stir well, sprinkle with remaining 1 teaspoon steak seasoning, and add celery. Cook and stir until meat browns, about 10 minutes.
  • Add 2 cups of water to cover the meat, onion, and celery. Bring to a boil, stirring and scraping to enhance flavors. Cover, lower heat, and simmer until beef is tender, approximately 2 hours.
  • Take out the meat and celery from the pan. Keep the meat to the side and dispose of the celery.
  • Combine gravy mix with 4 cups water, then pour the mixture into the pot juices. Bring to a boil and fold in the meat.
  • Add carrots and turnip to the pot, cover it, and let it simmer for 20 minutes. Then, mix in the potatoes, cover, and simmer for another 20 minutes.
  • Prepare the dumpling dough by combining flour, baking powder, and salt in a bowl. Use a pastry cutter or two knives to blend the shortening into the flour mixture until it becomes crumbly. Gently pour in the milk and stir lightly until a dough forms.
  • Set aside 2 cups of gravy from the pot. Spoon heaping tablespoons of dumpling batter onto the meat and vegetables. Cover and let simmer for 20 minutes without lifting the lid.
  • Drizzle the remaining gravy over the dumplings, gently mix, and plate for serving.
