Beef taco skillet with savory cumin, green chilies, and melted cheese.
Ingredients:
  • 1.5 pounds lean ground beef
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 tablespoon garlic powder
  • 1 tablespoon ground cumin
  • 1 pound processed cheese food (e.g. Velveeta), cubed
  • 1 (4 ounce) can diced green chiles
  • 1 cup tomato sauce
  • 0.75 head iceberg lettuce - rinsed, dried, and shredded
  • 2 tomatoes, chopped
  • 1 (16 ounce) package corn chips
Instructions:
  • In a large, deep skillet over medium-high heat, cook beef, onion, bell pepper, garlic, and cumin until the beef is evenly browned. Remember to drain any excess fat before proceeding.
  • Combine the cheese, green chilies, and tomato sauce with the beef mixture, cooking until the cheese is completely melted, about 5 minutes.
  • Divide the lettuce evenly among the salad plates, then top with the meat and cheese mixture. Garnish with chopped tomato and corn chips.
